Green Chili Chicken Enchiladas Ingredients:
12 corn tortillas |
3 c chicken, minced |
4 c monterey jack cheese, shredded |
2 c sour cream |
1/4 c olive oil |
4 cloves garlic |
3/4 c onion, minced |
1 t flour |
2 c green chili, chopped |
Directions:
1. heat tortillas until flexible, cover with towel to keep warm 2. make chili sauce: 3. -saute garlic & onion in oil 4. -blend in flour 5. -add water & green chilis, mix well 6. -bring to a boil and simmer, stirring frequently, 5 minutes 7. *mix 3 c of chili mixture with 3 c of chicken 8. *put 1/4 c (heaping) of mixture in a tortilla, roll up, place seam side down in baking dish (repeat with all tortillas) 9. *cover enchiladas with 3 cups shredded cheese 10. *pour remaining sauce over tortillas and bake in a 350 degree oven for 20 minutes 11. *remove from oven, top with sour cream and 1 cup shredded cheese 12. *bake additional 10 minutes |
