casserole or crock pot meal Ingredients:
16 oz chicken breasts, skinless, chopped |
3 tbl lemon pepper |
2 cans cream of mushroom soup |
1 can cream of chicken soup |
28 oz enchilada sauce, green |
1 cup green chile, chopped |
1 medium onion, chopped |
12 corn tortillas, lightly fried |
2 cups cheese, shredded |
Directions:
1. sprinkle 1 tbl of lemon pepper on chicken breasts and lightly brown; remove from heat and cube when cooled 2. mix soups, enchilada sauce, remaining 2 tbl of lemon pepper, chiles, chopped onion - then add chopped chicken and mix well 3. lightly fry corn torillas; drain on paper towels 4. spray 13x9 with Pam, layer 4 corn tortillas on the bottom and then add some chicken/sauce mixture, top with shredded cheese and repeat layers ending with cheese on top 5. bake in 350 degree oven for 45 minutes |
