Green Chili Breakfast Burritos

This is an any meal favorite in our house. I usually add whatever I can find to the eggs. It''s also good with bell peppers, ham and whatever else you can find.
Ingredients:
4 large eggs
1, 4 oz can roasted green chili (or your own if you have it! hatch is best!)
1/2 c chopped onion
4 small sausage links
cheese of your choice (cheddar, pepper jack, monterry jack)
tortillas (it's really great with whole wheat tortillias)
salsa (heat of your choice)
salt and pepper to taste
2 c hashbrowns or fried potatoes
2-3 t olive or veg oil
Directions:
1. Warm tortillas before hand and keep them warm and on the side.
2. Sautee onions in olive oil and add hasbrowns on med-high till golden brown.
3. Set this off to the side and keep the skillet warm for the eggs.
4. Scramble the eggs and salt and pepper to taste
5. Add to hot skillet, and cook till the eggs are no longer runny.
6. Add cheese, green chili and sausage and cook till everything is warm throughout
7. Fill tortillias with potatoes, eggs and top with more cheese and salsa.
