I got this recipe from a patient I had that made this as a meal preparation for her Occupational Therapy session!! Ingredients:
1 lb boneless pork sirloin, cut into cubes |
1 onion, diced |
1 garlic clove, minced |
2 cups diced hatch green chilies (can be bought canned) |
24 ounces diced tomatoes and green chilies |
1 tablespoon vegetable oil |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons flour |
4 -6 cups chicken stock |
Directions:
1. brown pork in oil. 2. add onions until soft then add garlic and saute for 1-2 min. 3. sprinkle flour and cook 1-2 mins stirring constantly. 4. add chilies, canned tomatoes, chicken stock, salt and pepper. 5. bring to boil, reduce heat and simmer 1 1/2 to 2 hr stirring occasionally until pork is tender. Chili can be thickened if needed by adding a mixture of cornstarch and water. |
