Yummy chimichurri made from cactus, olive oil, garlic, lemon & limes. Developed this recipe as a another way to incorporate cactus into my family's diet. *FYI: If you get the seasoned cactus, you probably won't need to add the red pepper flakes as it may get too hot. Ingredients:
1 (27 ounce) can tender green cactus pieces, in brine |
1/2 cup olive oil |
1 garlic clove |
1/2 lemon, juice of |
1/2 lime, juice of |
1 pinch red pepper flakes |
salt & pepper |
fresh cilantro (optional) |
Directions:
1. Drain cactus, add to food processor. 2. Add juice of lemon and lime, garlic and red pepper. 3. Add fresh cilantro to taste if desired. 4. Turn on food processor and then stream in about 1/2 cup olive oil, or until makes a nice consistency. 5. Salt and pepper to taste. 6. Enjoy! |
