Quite ez to make and more nutritious . Ingredients:
mint leaves for garnishing |
2 tsp dried shrimp , chopped or vegetable stock |
12 oz long green brinjal , sliced |
6 oz tofu cut into cubes |
make smooth paste |
2 chilli padi |
2 garlic |
2 corriander stalks |
1 s.onion |
2 tbsp lime juice |
Directions:
1. Heat some olive oil . 2. Fry the paste high heat one minute . 3. Add the brinjal . 4. Cook for 4 to 5 minutes . 5. Add the tofu and the shrimp / stock . 6. Cook for 4 to 5 minutes . 7. Garnish with mint leaves . |
