Green Breakfast Fritatas

Ingredients:
6 large eggs
3 tbsp flour
200 g peas
200 g green beans
300 g potatoes
75 g cheddar
Directions:
1. Boil the potatoes whole for 5 minutes. Cool 'til you are able to handle them then grate coarsely.
2. Defrost peas and beans if frozen and squeeze any liquid out. Finely chop the veg and mix with cheese and cooled potatoes.
3. Mix in the eggs (lightly beaten) and flour. Season with saly, pepper, herbs and chilli flakes.
4. Divide between 12 silicon muffin trays. Bake at 180*c for 20-30 minutes. Remove from tray and cool.
5. Eat warm or at room temperature.
