Green Beans With Spicy Tomatoes And Almonds |

This is a very tasty and very refreshing summer dish that is so good when you use market fresh beans. Great recipe that is a real crowd pleaser. Ingredients:
2 pounds fresh string green beans |
15 ounce can tomatoes with green chilies |
4 ounces sliced almonds |
1 garlic clove |
1 gallon water |
4 tablespoons olives oil |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Remove string and tips from green beans and wash in cold water. 2. Put sliced almonds in small skillet and toast until golden about 5 minutes. 3. Heat water in a large stockpot over high until just on verge of light boil then add green beans. 4. Blanch 1 minute then remove to large bowl filled with water and ice to halt the cooking. 5. In large skillet heat olive oil on medium until wisps of smoke begin to rise. 6. Add tomatoes and sauté 2 minutes then add chopped garlic. 7. Add green beans to skillet and let them sauté 5 minutes. 8. Shake and move skillet around so each bean gets coated with oil then turn off heat. 9. Season with salt and pepper then add toasted almonds and serve. |
