Green Beans with Shallots & Tarragon |

Ingredients:
2 cups water |
salt |
1 lb green beans, trimmed |
2 tablespoons butter |
2 tablespoons chopped shallots |
2 tablespoons chopped fresh tarragon or 2 teaspoons dried tarragon |
fresh ground pepper |
Directions:
1. Bring water to a boil in a saucepan. 2. Add salt and beans. 3. Bring to boil and simmer 8 to 10 minutes. 4. Beans should be tender but crisp, drain. 5. Return beans to saucepan and add butter and shallots. 6. Cook briefly but do not brown. 7. Add tarragon, salt and pepper. 8. Saute briefly and serve. |
