Green Beans with Pine Nuts |

The secret to great beans: Cook them like pasta, in lots of boiling water. Ingredients:
1 1/2 pounds green beans, stems removed |
2 teaspoons coarse salt |
1 tablespoon unsalted butter |
1/4 cup pine nuts |
Directions:
1. Bring a large pot of water to a boil. Add the green beans and salt and cook just until tender, about 4 to 6 minutes. Drain well in a colander. 2. In the same pot, over medium-high heat, combine the butter and pine nuts. Cook, stirring frequently, until the pine nuts are lightly toasted, about 2 to 3 minutes. Add the beans; toss to stir well. Season to taste with salt and freshly ground pepper. |
