There used to be a restaurant at the Waterfront in Pittsburgh - Cap City Diner. I think they're out of Columbus. They served these with their wonderful meatloaf. I couldn't get enough of these so I developed my own recipe for them. Read more . Good thing because they're not there anymore. Sigh.
Ingredients:
1 pound fresh green beans, ends snapped off
4 slices bacon, chopped
1/3 cup pecans, chopped
1 red pepper, sliced
1 tablespoon brown sugar
Directions:
1. Put bacon and pecans in a large skillet and saute them together until the bacon is crisp. Add the beans, red pepper and brown sugar and toss together well. Add a tablespoon or two of water, cover the pan and let the beans cook until slightly beyond tender crisp. Toss well again and serve.
2. Really nice with baked chicken, steaks or any plain meats.
