Green Beans With Olives And Capers |

This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lowery Estate in Arlington, Texas in 1984. Ingredients:
1 tablespoon extra virgin olive oil |
3 medium garlic cloves minced |
1 pound green beans ends snapped off |
4 canned tomatoes chopped with enough packing juice added to equal 1 cup |
8 large black olives pitted and chopped |
1 teaspoon drained capers |
1 tablespoon minced fresh basil leaves |
1/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
Directions:
1. Heat oil in a large sauté pan then add garlic and sauté over medium heat about 1 minute. 2. Add beans and stir to coat well with oil and garlic. 3. Add tomatoes, olives and capers to pan and bring liquid to a boil. 4. Reduce heat to medium low then cover pan and simmer 20 minutes stirring two or three times. 5. Uncover and cook to evaporate any remaining tomato liquid about 2 minutes. 6. Stir in basil, salt and pepper then serve immediately. |
