Made this on Christmas and got requests for recipe, so I had to sit down and remember what I did, Here goes!!!!!!!!!!!!!!! Ingredients:
2 pounds of frozen or fresh green beans |
1 (4 oz) can drained mushrooms |
2 tbsp minced garlic |
1 large red pepper, cut in fatter juliene strips |
6 tbsp olive oil |
2 tbsp butter |
1 small onion (red or yellow) chopped |
1 tsp salt |
1 tsp pepper |
1 tsp italian seasoning |
1/2 tsp red pepper flakes |
1/2 tsp thyme |
1/2 cup bread crumbs |
Directions:
1. In frying pan, melt butter & olive oil 2. Add onion, garlic, mushrooms, & red pepper slices, saute about 3-5 minutes but do not over cook 3. Add seasonings and mix 4. In a 9 x 13 pan add either fresh or frozen beans (do not cook ahead ) 5. Pour butter/onion mixture over beans and toss to coat all (add a little more oil is too dry, (do not over oil)) 6. Top with bread crumbs 7. Bake uncovered about 30-45 minutes (till beans are tender but not overcooked) |
