Green Beans with Ginger and Tomato |

Ingredients:
1 tablespoon(s) vegetable oil |
2 tablespoon(s) ginger |
1/2 teaspoon(s) coriander |
1 pound(s) green beans |
3 whole(s) tomatoes |
1 tablespoon(s) lime juice |
Directions:
1. In large skillet with lid - heat oil over medium high heat. Add ginger and coriander, cook for 1 minute - stirring constantly. Add green beans, season with salt & pepper, cook 5 minutes,until beans soften. Add tomatoes and cook for 3 minutes. Add 1/4 cup water, reduce het to medium, cover and cook for 4 minutes. Uncover, increase to high and cook until liquid is reduces, approximately 5 minutes. Stir in lime juice, season to taste with salt & pepper. |
