A nice vegetable side dish when boring green beans just won't do. Ingredients:
1 lb green beans |
1 tablespoon olive oil |
2 garlic cloves, minced |
1/2 cup vegetable broth |
1/4 cup red onion, chopped |
1 teaspoon lemon juice |
1/4 cup pine nuts, toasted |
1/2 cup feta |
Directions:
1. Saute garlic in olive oil. Add green beans. Saute for 5 minutes, stirring regularly. 2. Add broth, cover and cook for 3 minutes. Add red onion and continue to cook for 2 minutes. 3. Add lemon juice, toss and transfer to serving bowl. 4. Add pine nuts and feta. 5. Serve. |
