1 pound green beans, trimmed |
1 tablespoon olive oil |
2 tablespoon orange juice |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2/3 cup whole walnuts, toasted |
1/2 cup dried cranberries |
1/2 cup crumbled goat cheese |
Directions:
1. Cook green beans in salted water until crisp-tender, about 4-6 minutes. 2. Toss with oil, juice, salt, pepper, cranberries and nuts. 3. Top with goat cheese and serve. |
