Green Beans With Cilantro Sauce |

I make this green bean side dish often substituting the herbs ( fresh dill, fresh tarragon, cilantro, or parsley etc. ) With fresh lemon and garlic it's a tangy summertime side dish when beans and herbs are plentiful from the garden. Read more . Note, there is no vinegar in the recipe Ingredients:
1 lb green beans |
1 bunch cilantro ( or other herb of choice ) |
1 fresh lemon |
2 cloves garlic |
1/4 cup extra virgin olive oil- or a bit more if you wish |
optional: 1/4 cup walnuts |
coarse salt, fresh grated black pepper to taste |
Directions:
1. Steam green beans till fork tender 2. Immediately drain and stop cooking process by running under cold water, then drain well again 3. In a food processor add the cilantro, garlic, lemon juice, olive oil and process into a smooth paste; adding more olive oil if needed 4. Mix gently into green beans 5. Season to taste with salt and fresh cracked pepper 6. Note: optional ingredient is to add some walnuts to the cilantro mixture as you process the mixture 7. Note: this can be a salad or veggie side dish |
