Green Beans With Blue Cheese |

I found this recipe in the 2005 Southern Living Annual Recipes Cookbook. I made it for Thanksgiving last year and it became an instant family hit. Ingredients:
1 lb fresh green beans |
1 cup cooked ham, chopped |
3/4 cup blue cheese, crumbled |
1/3 cup walnuts, chopped, toasted |
1 teaspoon pepper |
Directions:
1. Cut trimmed green beans into 2 inch pieces. 2. Arrange beans in a steamer basket over boiling water. 3. Cover and steam 5 minutes. 4. Plunge beans into ice water to stop the cooking process; drain. 5. Saute chopped ham in a large skillet over medium-high heat for 2 minutes. 6. Add green beans and saute 3 minutes. 7. Add crumbled blue cheese and cook, stirring, constantly, 2 minutes or until cheese is melted. 8. Add chopped walnuts and pepper, tossing well. 9. Serve immediately. |
