This is a little bit different than the other recipes listed on here. Ingredients:
1 lb fresh green beans |
1 cup water |
1/2 teaspoon kosher salt |
6 slices bacon |
1 medium onion, sliced in 1/4 inch slices |
1/8 teaspoon black pepper |
1/4 cup fresh tomato, diced |
Directions:
1. Trim the ends of the beans & snap into 2 inch pieces. 2. In a 3 quart saucepan, place the beans, water & salt. 3. Bring to a boil. 4. Reduce heat to low; cover & simmer 10-15 minutes or until crisp-tender. 5. Drain well & keep warm. 6. Meanwhile, cut the bacon into 3/4 inch pieces. 7. Fry in a medium skillet until desired doneness. 8. Remove bacon & drain on paper towel. 9. Discard all but 1 T. of the bacon drippings. 10. Saute' the onion in the drippings over medium heat for about 10 minutes or until soft. 11. Stir the cooked bacon, onion & pepper into the beans & heat thouroughly. 12. Top with the diced tomato & serve. |
