Green Beans W/ Bacon and Almonds |

Quick and healthy side dish - I usually serve with salmon or chicken and rice. Balsamic vinegar or olive oil works well too. I typically buy nuts like almonds, walnuts and cashews in bulk and toast a good amount for future recipes. That way I don't get stuck buying per recipe - they're way more expensive that way! I do the same for bacon - buy a package and micro-cook, cool and crumble and store in the fridge. Ingredients:
1 lb green beans, rinsed and snapped in half |
1 oz bacon, diced |
1/4 cup almonds, dry roasted, chopped |
1 t cider vinegar |
Directions:
1. Rinse green beans and snap in half. Steam on stove (or microwave) until bright green and done, about 5 minutes. 2. In a medium bowl, combine hot green beans, bacon, almonds and vinegar. Toss to coat. |
