Ingredients:
2 pounds fresh green beans, cut into 1 1/2-inch pieces
24 small cherry tomatoes, halved
1/2 cup chopped red onion
3/4 cup chopped fresh parsley
1/4 cup water
1/4 cup white wine vinegar
2 tablespoons grated parmesan cheese
2 tablespoons olive oil
1/2 teaspoon dried thyme
1/2 teaspoon pepper
2 garlic cloves, minced
Directions:
1. Steam beans, covered, 8 minutes or until crisp-tender. Drain beans; plunge into cold water, and drain. Combine beans, tomatoes, and onion in a medium bowl.
2. Combine the chopped parsley and remaining ingredients in a small bowl, stirring until well-blended. Pour over the vegetables, tossing gently to coat. Serve at room temperature.
