Green Beans & Potatoes Dijon |

This recipe was copied out of a magazine and it looks like it would really be tasty. With all the veggies coming in our gardens Ingredients:
12 ounces red potatoes |
12 ounces green beans |
3 tablespoons olive oil |
1/2 teaspoon lemon zest |
2 tablespoons lemon juice |
1 tablespoon dijon mustard |
1 garlic clove |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons parsley |
Directions:
1. Quarter potatoes and boil with skins for 4 minutes. Halve fresh green beans and boil 4 minutes. Drain. Mince garlic and mix with rest of ingredients and add to potatoes and green beans. Serve warm. |
