Vegetarian dish . Serve cold or warm with pitta bread Ingredients:
4 tbsp. olive oil |
3 onions, chopped |
4 cloves of garlic, crushed |
1kg of fresh green beans trimmed or frozen (fine green beans) |
600g ripe tomatoes - diced, or 2 tins of crushed tomatoes |
2 tbsp. lemon juice |
2 chicken stock cubes |
1/2 cup hot water |
pepper |
Directions:
1. Heat the oil in a saucepan, add onions and fry till soft. 2. Add garlic and green beans. Keep frying on low heat for 15 minutes, or till the beans start to wilt. 3. Add the tomatoes, lemon juice, Chicken Stock Cubes, water and pepper. 4. Cover and cook on low heat . 5. Serve cold or warm and with pitta bread |
