A simple, straight-forward way to serve green beans as a side dish. This is a good choice for a cold dish at a buffet. Ingredients:
1 lb green beans, trimmed, washed, drained, and cut into thirds |
1 medium onion, chopped |
2 tomatoes, chopped |
1 teaspoon salt |
1/3 cup extra virgin olive oil |
3 1/2 teaspoons sugar |
1/2 cup water (or more) |
Directions:
1. Place onions and tomatoes in a saucepan. Sprinkle with salt and stir gently. Add green beans, olive oil and sugar; stir. Cover and cook over medium low heat, stirring occasionally, for about 15 minutes until beans are softened. Once the liquid has been absorbed, stir fry a couple of minutes. Add 1/2 cup water, cover, and simmer 40 minutes until beans are tender. The beans will be moist, but not watery. 2. Serve cold or room temperature. |
