GREEN BEANS IN SHERRY MUSHROOM SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Fischer Estate in Crandall, Texas in 1987. Ingredients:
2 pounds fresh green beans |
1 cup water |
2 tablespoons butter |
1/4 cup finely chopped white onion |
1 clove garlic minced |
1/2 pound fresh mushrooms thinly sliced |
2 tablespoons all purpose flour |
1 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/2 cup beef broth |
1/2 cup whipping cream |
2 tablespoons dry sherry |
Directions:
1. Wash beans and remove ends then bring one cup water to a boil in a large saucepan. 2. Add beans then cover and reduce heat and cook 8 minutes then drain and keep warm. 3. Melt butter in a medium saucepan over medium heat. 4. Add onion and garlic then cook stirring constantly for 5 minutes. 5. Add mushrooms and cook until tender stirring often. 6. Stir in flour, salt and pepper then cook 1 minute stirring constantly. 7. Gradually add broth and whipping cream then cook stirring constantly until mixture thickens. 8. Add sherry then cook 2 minutes and add beans tossing to coat then serve immediately. |
