Green Beans In Garlic Sauce

This dish is perfect served hot, tossed with breadcrumbs and parmesan.You can also serve them cold as a salad by omitting the bread crumbs and cheese,and dress with either a squeeze of lemon or a splash of basamic vinegar
Ingredients:
1 1/2 lbs fresh green beans
4 oz fresh shitake mushrooms
1/2 cup grated parmesan cheese (optional)
1/2 cup plain bread crumbs (optional)
2 slices pancetta
1/4 cup extra virgin olive oil
1 tbsp butter
1/4 cup fresh italian parsley, chopped
pinch of fresh basil and oregano, minced
pinch of red pepper flakes
8 cloves of garlic, peeled
Directions:
1. Bring 5 cups of water and 1 tbsp salt to a boil in a large saucepan.
2. Add fresh green beans (tipped and tailed)
3. Boil beans for 3-4 minutes, until tender crisp
4. Shock beans in a bowl of ice water for 30 seconds to maintain bright green color
5. Drain well in colander
6. In a large heavy bottomed skillet, brown pancetta ,drain on paper towels and crumble
7. Heat olive oil in same skillet with garlic cloves and mushrooms
8. Saute until garlic becomes a pale tan color but not brown
9. Mash garlic in oil with the tines of a fork
10. Add cooled green beans, parsley, butter, crumbled pancetta and remaining ingredients, heat through
11. If serving hot , toss with bread crumbs and parmesan and serve when butter has melted
12. If serving cold as a salad, omit bread crumbs and parmesan, and dress with either a few drops of fresh squeezed lemon juice or a few drops of balsamic vinegar
