                    Good green beans and Tomatoes Ingredients: 
                    
                        
                                                4 lb fresh green beans, cut into 1/2  pieces  |  
                                                1 large sweet onion, finely chopped  |  
                                                4 tsp cumin seeds  |  
                                                1 1/2 tsp cayenne pepper, or to taste  |  
                                                1 1/2 tsp salt  |  
                                                chopped fresh cilantro to taste  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Bring a large pot of salted water to a boil, add beans & cook about 6 minutes. Drain well. Put oil in a large sauce pan, add onion, ginger, chilies & cumin seeds & cook over high heat until onions are soft & brown, about 8 minutes. Add coriander & cayenne, stir & cook about 2 minutes, add tomatoes & cook until most of the liquid is gone, about 5 minutes, add the beans, salt & cook until beans are heated then cover & cook until beans are crisp tender, about 10 minutes. Stir in cilantro & place on a large deep platter, serve either warm or room temperature.                              |
