Green Beans and New Potatoes |

This was a dish you got a lot in Ohio during the late summer. Ingredients:
1/4 lb salt pork, cut into 1/2-inch cubes |
6 cups water |
2 lbs fresh green beans, snapped |
1 small onion |
1/2 teaspoon pepper |
12 new potatoes, washed and scrubbed |
Directions:
1. Place salt pork and water in a large Dutch oven; cover and cook over medium heat 1 hour. 2. Add green beans, onion, and pepper; cover and simmer 30 minutes. 3. Add potatoes, cover and simmer 50 minutes or until vegetables are tender. |
