simple vegetable dish Ingredients:
2 tablespoons butter (or low-fat substitute) |
1/2 cup chopped scallion, bulbs and tops |
1 lb green beans, cleaned and trimmed |
1 (28 ounce) can tomato puree |
1/4 teaspoon dried basil |
1/4 teaspoon dried rosemary |
salt, to taste |
ground black pepper, to taste |
Directions:
1. In a large skillet, over medium heat, melt butter and saute scallions for 3 minutes. 2. Add green beans and saute for 2 more minutes. 3. Add tomato puree, basil, rosemary, salt and pepper. 4. Cover, reduce heat and simmer until the beans are tender (5-6 minutes) Serve hot or cold. |
