This dish may be a classic old standby but the addition of the green onions add a little bit of a change. You can serve it hot or you can serve it as a room temeperature salad by substituting olive oil for the butter and adding a splash of lemon juice or rice wine viniger at the last minute with the salt and pepper. Ingredients:
1 lb. french green beans |
2 t unsalted butter |
1 cup sliced almonds |
1 cup chopped green onions |
salt |
freshly ground pepper |
Directions:
1. Trim the ends of the beans. 2. Bring a large pot of salted water to a boil over high heat. 3. Plunge the green beans into the water and cook for 2 minutes. 4. If you are using the thicker beans, cook for 3 minutes. 5. Drain immediately into a collander and plunge into a large bowl of ice water to stop the cooking. 6. This blanching will help retain the lovely green color of the beans. Drain again and set aside. 7. In a large frying pan, melt the butter over medium low heat taking care not to burn the butter. 8. Add the slice almonds stirring occasionall until lightly browned and fragrant, about 5 minutes. 9. Add the green onions and the green beans. 10. Stir until the onions are softened but not browned and the beans are heated through but not overdone, about 2 minutes (longer if you use the thicker beans). 11. Season to taste with salt and pepper. |
