My version of the classic dish. Ingredients:
1 pound green beans |
30 g (1/4 cup) sliced almonds |
1/2 cups onions, diced |
4 cloves garlic, minced |
1 tbsp earth balance |
1 tbsp olive oil |
1/2 tsp salt |
1/4 tsp pepper |
Directions:
1. Cook beans in salted boiling water until just barely al dente, about 2 - 3 minutes. Drain and transfer to ice water bath. 2. In a dry pan on medium heat, toast sliced almonds until slightly brown. Remove from pan and set aside. 3. In a large pan on medium heat, sauté onions in olive oil and Earth Balance (butter) until soft but not brown. Add garlic and cook an additional minute. 4. Add green beans and almonds to pan, season with salt and pepper, and stir to combine. Reduce heat to medium-low, cover and cook, stirring occasionally, until desired level of tenderness. |
