Beautiful plate of goodness! Ingredients:
1 lb fresh green beans, trimmed and halved |
2 medium tomatoes, sliced |
1 small onion, sliced |
1/3 cup olive oil |
3 teaspoons red wine vinegar |
1 teaspoon dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Steam green beans for 6 to 8 minutes. 2. Put in cold water. 3. Place beans in the center of a platter. 4. Arrange tomato and onion slices around beans. 5. Whisk together dressing. 6. Sprinkle over vegetables. 7. Chill. |
