My take on Three Bean salad - quick and easy to whip up for lunch (although it does require marinating overnight) or a good salad for BBQs and picnics. I like the dressing with a lot of sweet, so please change up the proportions to fit your taste. Read more ... You could certainly use fresh green beans instead of canned...a good use of garden green beans & tomatoes! Ingredients:
1 can (14.5oz) cut green beans, drained well |
10-12 grape tomatoes, halved |
3-4 green onions, chopped |
1/4 cup feta cheese crumbles (or more) |
1/4 cup red wine vinegar |
1/4 cup canola oil |
2 tblsps white sugar |
dash of hot sauce |
dash of worcestershire sauce |
salt & pepper to taste |
Directions:
1. Combine oil, vinegar, sugar, hot sauce, and worcestershire sauce. Shake or whisk to emulsify. 2. Pour over green beans, tomato, green onions, and feta cheese and mix well to coat. 3. Marinate in refrigerator overnight, stirring again several times. 4. (The feta cheese could be used as a garnish, however mixing it in with the other ingredients causes it to melt a bit into the dressing and adds more flavor to the entire salad.) |
