An awesome chowder to serve on a cool fall day. It is perfect served with fresh bread or my 40 minute rolls. Ingredients:
1 1/2 pound fresh green beans (canned or frozen maybe used) |
2 cups diced potatoes |
2 cups sliced onion |
1/2 tsp. pepper |
1 tsp. thyme |
3 bay leaves |
2 pinches of dried sage or 2 leaves of fresh |
1/2 tsp. salt |
1 3/4 qt. water |
1 pt. sour cream or plain yogurt |
Directions:
1. In a 4 qt. kettle: 2. place water, fresh green beans (if using canned add later), potatoes, onion, and spices. 3. Bring to a boil. 4. Turn down and simmer uncovered until potatoes/beans are done. 5. Remove bay leaf. 6. Add canned green beans (drained). 7. Refrigerate 24 hours to blend flavors. 8. While soup is cold add sour cream or yogurt. 9. Reheat to serving temp. 10. DO NOT BOIL. |
