A simple refreshing green bean salad. Ingredients:
1 lb fresh green beans, washed and trimmed |
1 teaspoon salt |
2 quarts water |
1/3 cup extra virgin olive oil |
2 tablespoons white wine vinegar |
1 teaspoon dried mexican oregano |
1/2 medium red onion, diced finely |
salt and pepper |
Directions:
1. Was,trim,and cut green beans into 2 inch segments.Peel and chop onion,set onion aside. 2. Bring water and 1 teaspoon of salt to a boil.Add beans and simmer 8 minutes.Immediately drain and rinse with cold water to stop the cooking process,. 3. Whisk together oil,vinegar,oregano,and salt and pepper to taste.Mix with beans and onion,toss well,Serve or chill for 1 hour before serving. |
