Green Bean Salad with Blue Cheese Dressing |

Here's your salad and your side all in one dish. This blue cheese and green bean combo is delicious served with a juicy beef tenderloin. Ingredients:
1/4 cup low-fat sour cream |
1 tablespoon light mayonnaise |
2 tablespoons low-fat buttermilk |
2 tablespoons crumbled blue cheese |
1/2 teaspoon fresh lemon juice |
1/8 teaspoon salt |
1/8 teaspoon pepper |
2 cups trimmed and halved green beans (about 8 ounces) |
1/3 cup finely chopped red onion |
2 slices 40%-less-fat bacon (such as gwaltney), cooked and crumbled |
Directions:
1. Combine first 7 ingredients in a small bowl; stir with a whisk. 2. Steam green beans, covered, 14 minutes or until crisp-tender. Rinse with cold water. Drain well, and pat dry with paper towels. 3. Combine beans and onion in a large bowl; add dressing, and stir gently. Sprinkle evenly with crumbled bacon. |
