~Salad~ Ingredients:
1 pound green beans |
2 tomatoes,cut in wedges |
1 small onion,sliced |
1/4 cup parmesan cheese |
ripe olives |
vinaigretta dressing |
1/3 cup olive oil |
2 tablespoons wine vinegar |
1 clove garlic,chopped |
1 teaspoon salt |
1/2 teaspoon dark mustard |
dash of pepper |
Directions:
1. Remove the end of beans,if large cut in French Style lengths. 2. Heat bean in about 1 of salted water,bring to boil. 3. Cook uncovered for about 5 minutes. 4. Cover and cook until tender(whole beans,about 15 minutes..French Style..about 10 minutes) Drain. 5. Prepare Vinaigrette dressing. 6. Pour over warm beans and toss. 7. Cover and refrigerate about 2 hours. 8. Remove beans to a lettuce lined plate,using a slotted spoon. 9. Add the tomatoes,and onions. 10. ~Serve Sprinkle with cheese and garnished with olives.~ |
