GREEN BEAN SALAD This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Tinsley Estate in Venus, Texas in 1987. Ingredients:
2 pounds fresh green beans |
boiling water |
salt |
8 tablespoons olive oil |
1 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
1 teaspoon dijon mustard |
1 tablespoon vinegar |
crisp lettuce leaves |
1 pound cherry tomatoes |
chopped chives |
Directions:
1. Trim ends of beans but leave whole then cook in boiling salted water 10 minutes and drain well. 2. Combine oil, salt, pepper, Dijon and vinegar then blend well and pour over cooked beans. 3. Refrigerate then just before serving line a serving plate with lettuce leaves. 4. Arrange marinated green beans in center then surround with cherry tomatoes. 5. Sprinkle with finely chopped chives. |
