I bought green beans on sale and made this refreshing sald from several recipe adaptions I saw on the Net Ingredients:
2 lbs of fresh green beans steamed or cooked tender but not overly soft |
1 large red bell pepper diced |
1/4 cup fresh parsly chopped ( dill may also be a nice variation too ) |
2 large green onions chopped |
dressing |
1/4 cup plain yoghurt |
juice from 2 lemons |
1/2 cup olive oil |
salt and fresh black pepper to taste |
Directions:
1. drain and cool cooked beans 2. Mix in the parsley, green onions and red bell pepper 3. make a dressing by combing all ingredients 4. Mix into bean mixture 5. salt and pepper to taste |
