Makes18 to 24. Depends on how big they are. We like these around my house. Ingredients:
2 cups fresh green beans, cut in 1/4-inch pieces and cooked until |
crisp-tender |
(use both green and wax beans if you have them) |
1 1/2 cups all-purpose flour |
1 tablespoon baking powder |
3/4 teaspoon salt |
1 egg, beaten |
1 cup milk |
oil for deep frying |
Directions:
1. Heat oil in deep-fryer to 370°. 2. In a medium bowl, stir together flour, baking powder, and salt. 3. In a separate bowl, whisk egg with milk; stir in beans. 4. Add bean mixture to dry ingredients, mixing until just moistened. 5. Drop batter by tablespoonfuls into hot oil (370 °). 6. Deep-fry in batches until golden brown, or for about 3 to 4 minutes. 7. Remove to paper towels to drain. 8. Makes about 18 to 24 fritters. |
