Green Bean Curry

The crispy texture of this salad also brings vibrant colour to your dinner table.
Ingredients:
1 1/2 lbs mixed green & yellow beans
2 tbsp canola oil
1 tsp mustard seeds
1 tsp curry paste
salt & pepper
1/3 cup coriander; freshly chopped
1 tsp lemon juice
fresh thyme
Directions:
1. Heat oil in skillet over medium heat.
2. Add mustard seeds.
3. As they begin to pop stir in curry paste.
4. Cook 1 minute
5. Add beans and about 3 cups of water (just enough to cover the beans)
6. Bring to a boil.
7. Reduce heat and simmer covered for 5 minutes. Remove cover.
8. Drain water leaving 1/4 cup.
9. Season with salt & pepper.
10. Sprinkle with coriander and lemon juice.
11. Garnish with fresh thyme.
