Green Bean Celery And Olive Salad |

GREEN BEAN CELERY AND OLIVE SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Washington Estate in Spring, Texas in 1990. Ingredients:
1 pound green beans ends trimmed |
1/2 teaspoon salt |
1/4 cup extra virgin olive oil |
2 tablespoons red wine vinegar |
1 small clove garlic minced |
1/8 teaspoon crushed red pepper flakes |
1 stalk celery trimmed and chopped |
1/2 cup pitted green olives chopped |
Directions:
1. Bring a large saucepan of water to a boil. 2. Add beans and salt to taste and cook until beans are tender about 8 minutes. 3. Drain beans and rinse under cold water to stop cooking then pat beans dry. 4. In large bowl whisk together oil, vinegar, garlic, red pepper flakes and salt. 5. Add beans and toss to combine then add celery and olives and toss again then serve immediately. |
