Green Bean And Potato Salad

Ingredients:
1 pound fresh green beans tips removed and halved
1/2 pound small potatoes unpeeled
1/3 cup olive oil
3 tablespoons wine vinegar
3 garlic cloves chopped
1 tablespoon dried oregano
1 tablespoon chopped fresh parsley
1 pinch dried red pepper flakes
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Cook beans in 2 quarts of salted water for 10 minutes.
2. Drain and place on a serving platter.
3. Boil potatoes until tender then drain (do not rinse) and let cool leaving the skin on.
4. Add to the green beans.
5. Using a large spoon gently toss beans and potatoes with remaining ingredients.
6. Serve salad at room temperature or refrigerate for a marinated flavor.
