Green Bean and Parmesan Soup |

Great flavor combination and very easy to throw together. Ingredients:
2 tablespoons butter |
8 ounces green beans, trimmed |
1 garlic clove, crushed |
2 cups vegetable stock |
1/2 cup parmesan cheese, grated |
1/4 cup light cream |
salt |
black pepper, freshly ground |
2 tablespoons parsley, chopped to garnish |
Directions:
1. Melt butter in a medium saucepan and add the green beans and garlic cooking for 2-3 minutes over medium heat,stirring frequently. 2. Stir in the stock and season with salt and pepper;bring to a boil. 3. Lower heat and simmer,uncovered,for 10-15 minutes until beans are tender. 4. Pour soup into a food processor and process until smooth. 5. Return to pan and reheat slowly. 6. Stir in Parmesan cheese and cream and sprinkle with parsley. |
