Green Bean and Chicken Salad |

From Fast Chicken / The Hawthorn Series Ingredients:
750 g green beans |
2 cups cooked chicken, shredded |
250 g cherry tomatoes, halved |
200 g gruyere cheese, diced |
1/2 cup light olive oil |
1/4 cup red wine vinegar |
2 tablespoons whole grain mustard |
2 green onions, finely chopped |
Directions:
1. To make Vinaigrette: Combine all the ingredients in a frying pan and warm over low heat. 2. Add the chicken to vinaigrette and gently warm through. 3. Blanch the beans in boiling water for 4-6 minutes. 4. Drain the beans and add to the pan with the tomatoes. 5. Romove from heat , stir in the cheese and toss lightly. |
