Green and White Salad with Blue Cheese Dressing |

To keep the salad fresh and crisp, serve this dish right after you toss it with the dressing. Ingredients:
1/3 cup fat-free cottage cheese |
1/3 cup fat-free sour cream |
1/4 cup (1-ounce) crumbled blue cheese |
2 tablespoons 1% low-fat milk |
1/4 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
1 garlic clove, minced |
2 1/2 cups (1-inch) chopped iceberg lettuce |
2 cups (1-inch) chopped curly leaf lettuce |
3/4 cup (1/4-inch) diced cucumber |
1/3 cup (1/4-inch) diced celery |
1/4 cup thinly sliced green onions |
Directions:
1. To prepare dressing, combine the first 7 ingredients in a food processor or blender, and process until smooth, scraping sides of bowl once. 2. To prepare salad, combine lettuces, cucumber, celery, and onions in a large bowl. Add dressing; toss well. Serve immediately. |
