Green and Gold Herring Salsa (Packer Salsa) |

Ingredients:
24 ounce(s) jar of marinated herring in wine sauce |
1 cup(s) spanish onion peeled and diced |
1 cup(s) yellow pepper cleaned, seeded, cored and diced |
1 whole(s) jalapeno pepper (optional-to taste) seeded, cored and minced |
1 cup(s) fresh cilantro minced |
1 whole(s) juice of one lemon |
Directions:
1. Drain herring, reserve sauce and onions, cut herring fillets into quarters. 2. Combine all ingredients in a large bowl, toss gently. 3. Place Packer Salsa in a large re-sealable container, and cover with reserved wine sauce. 4. Seal container and chill 24 hours before serving. 5. Serve with green and gold corn chips or your favorite dipping crackers |
