This salad is a treat for all the senses. I like it best with this lemony vinaigrette, but a light creamy dressing works well, too. Ingredients:
1 tablespoon apple cider vinegar |
1/2 cup lemonade |
1 tablespoon fresh lemon juice |
1 tablespoon peanut oil |
2 tablespoons honey |
1/2 teaspoon salt |
1/2 teaspoon ground black pepper |
1/2 teaspoon celery seed |
1/2 teaspoon hot sauce |
6 cups torn romaine lettuce |
2 green onion tops, chopped |
1/2 green bell pepper, chopped |
1/2 english cucumber, chopped |
1/2 cup frozen green peas, thawed |
2 stalks celery, sliced |
1/2 granny smith apple, cored and chopped |
16 seedless green grapes, halved |
1/2 cup crumbled blue cheese |
Directions:
1. Place the vinegar, lemonade, lemon juice, peanut oil, honey, salt, pepper, celery seed, and hot sauce in a blender. Puree until blended, then set aside for 30 minutes. 2. Place the romaine lettuce, green onions, green pepper, cucumber, peas, celery, apple, grapes, and blue cheese in a large bowl. Pour in the salad dressing and toss to coat. |
