Roll up your favorite sandwich ingredients in a flour tortilla. Wrap in foil, wax paper, or a napkin, and you'll have today's version of the sandwich-a wrap. Ingredients:

8 ounces lean ground round |
1/2 cup chopped onion (about 1/2 medium onion) |
2 cups hot cooked rice (cooked without salt or fat) |
1/2 cup plain low-fat yogurt |
1/4 cup pine nuts, toasted |
1/4 cup (1 ounce) reduced-fat feta cheese |
1 tablespoon lemon juice |
1/2 teaspoon garlic salt |
1/4 teaspoon pepper |
1/8 to 1/4 teaspoon ground cinnamon |
4 (8-inch) flour tortillas |
16 fresh spinach leaves (about 1 1/2 ounces) |
Directions:
1. Coat a large skillet with cooking spray; place over medium-high heat until hot. Add ground round and onion; sauté 5 minutes or until beef is browned and onion is tender, stirring until beef crumbles. Drain well. 2. Combine beef mixture, rice, and next 7 ingredients; stir well. Lay tortillas on a flat surface; line with spinach leaves. Spread beef mixture evenly over tortillas, and roll up tortillas, jelly-roll fashion. Wrap in aluminum foil; cut in half to serve. |
