This is a great non-lettuce salad that will last for awhile in the fridge without getting too soggy. I originally saw it as a taste test at Jungle Jim's Market, and decided to spice it up my way for a great mix. Read more . Not to mention, its pretty healthy! Ingredients:
matsos sweet greek dressing and marinade |
1 head broccoli, chopped to small florets |
1/2 head small red cabbage |
2 carrots, in small slices |
1 green pepper, chopped |
2 mild peppers (like poblano) chopped |
3 stalks celery, chopped |
4 large mushrooms, sliced |
1 container grape or cherry tomatoes |
1 can chickpeas, drained and rinsed |
1 cup olives, pitted |
feta cheese |
Directions:
1. Prepare veggies by washing, drying, and chopping, slicing, etc. Mix in bowl until evenly dispersed. 2. Mix in feta cheese until evenly dispersed. 3. While mixing, add enough Matsos dressing to coat all veggies evenly. 4. You can make this same salad with your fav veggies or whatever is in season. Don't like feta? Cheddar works just as well. 5.
